First up, yes it will improve you cardio as you continue to improve. Of course alot of people don't have the same determination to train like you do. And for anyone reading, he really does train hard. However such hardcore conditioning will take from your weekly allowence of recovery whereas slow cardio days are kind of like a break so you can mix it up depending on how your recovery is faring at the time.

As for the veges thing you are really quite on target. It is the problem that hygenist vegans cen never come to terms with. If you only eat veges and nothing else you will become emaciated and weak. It is close to impossible for someone to get there daily caloric requirements from veges alone and if they did, they would be spending most of their time either eating or on the toilet. But if you are eating meat and fats as well, you can handle the lower calorie count without losing muscle mass. This is a great way to lose weight. However once you have reached an ideal weight it is good to start adding more energy to ones diet.

great part about fruit and veg is that they are easy energy which healthy and quick to digest. So you can eat them as much as you like really and keep ones metabolism burning the whole day. Great stuff.
