Simply enough as you watch more and more proficient Jedi then you realize their techniques are faster. For eg. The fight between Darth Vader and Obi-Wan was a fight between two old fogies not as strong in the force as say others. Also when Luke started to use one hand in stead of both it meant that he was letting the force carry more... savvy? |
The reason the fights were so slow is cuz the actors were slow and it was old technology. There would be no point if having it be that heavy even if you could use the force.
