You don't necessarily have to tap them out. In Judo if you can get a "hold down" for 25 seconds, then you win by a pin. You can also tap them out by choke, armbar, etc.
Or if you get a perfect throw that lands your opponent flat on his back, you win by scoring an Ippon or full point.
