My favorite kick has to be the axe kick. I would never seriously hurt anybody but just coming close enough to show them that I could've, sure puts them in a different state of mind.
I always "enjoyed" doing a simple yet effective, low side kick. My father and I used to try to trip each other that way albeit with much less strength and emphasis.
In sparing my favorite would be a sweeping crescent kick that knocks down the leading hand followed by a very quick front kick to the mid section or head. Very effective in sparring - no one ever sees the second kick coming!
For me the Number One (Front Leg) Round Kcik would be my favorite. Not the most powerful, but I am very fast with it and can easily go from a torso kick fake to a head kick. Definitely the quickest way to earn those points in a round of sparring. For board-breaking, the basic side kick is by far my most powerful kick.

to be honest i dont find that anything other than turning, chop side, back, push and axe work well in sparring (either against TKD ers or kickboxing/thai) so dont use much else.
also, with the exception of back kick, spinning kicks can land you in a bit of trouble if you land flat footed at all so i would recommend sticking another kick on the end of the spinning one such as 1/2 turning in much the same way you would put a jab on the end of a punching combo moving in and a hook moving out.....
I would say my favorite kick is a turning jumping turning kick. (Or maybe a 360 jumping turning depending on what you call it.) I have never heard of a 540 kick, what does it look like?
Regular jump spin would be considred 360, since you jump with your both feet on the ground, kick with your back leg, and you finish the kick in the same position.
540 is done while you are running, you lift and spin with your front leg, jump off with the back leg, you execute the spin kick with your back leg, then you land with your back leg in the back. You get extra momentum due to half spin before you throw your kick.
There is also 720 kick, which is you spin 360 first, then you execute the jump spin kick. Not sure how effect this one is in real fight situation but looks cool when done properly.
